  1. Dice:
    1 large onion
    Toss this on the stove with some oil and cook until golden brown (~15 min).

  2. Later you'll need:
    1 cup cooked lentils
    so toss those on the stove as well. You can use 1/2 lentils, 1/2 adzuki beans. We usually just use all red lentils since they have a softer texture and combine better when you make the patties. Feel free to experiment here to find what you like!

  3. While you wait, remove the stems of 18 cremini mushrooms

  4. Pulse until finely chopped:
    18 stemless cremini mushrooms
    3 large garlic cloves
    1 tbsp fresh thyme
    Usually it all gets a bit mushy and then you know they're good to go.

  5. Once the onions are looking choice, add in your mushroom mixture and cook while stirring until liquid evaporates (~ 2-3 min). Remove from heat and let cool.

  6. Add in your cooked lentils to the mixture.

  7. Now you can add in the next 3 and mix until well combined:
    3/4 cup whole wheat breadcrumbs
    1 large egg whisked
    1 tsp salt

  8. Form into patties and coat in cornmeal:
    ~1/2 cup cornmeal

  9. Cook burgers with a lil' oil (~3 min per side). Toss some cheese on after you flip them and let it get all melty.

  10. Throw these guys on some brioche buns and toppings of choice and nom.

    If you need topping inspiration:
    One of our favorites we like to do is a lil blob of goat cheese with tomato, basil, and a bit of ketchup and homemade mayo or aioli.
